When you’ve got leftover chicken, I say do something different with it. Don’t just put it back on a plate with the same side dishes. That’s just so boringggggg. Last night, when I had leftover grilled lemon chicken, I turned it into a wrap. Because everything had already been cooked and simply needed to be assembled, this is great for a tiny kitchen.

Hot Tip: I heated up the leftover chicken before putting it into the wrap. I even warmed up the flatbread. It made this meal feel more like supper than a lunch I would bring to work.
Ingredients:
- Flatbread
- Grilled Chicken
- Edamame Hummus (any hummus would work, but I love the combo of the edamame with the lemon flavor of the chicken)
- Shredded Carrots (or cole slaw mix)
- Feta
